Let’s dive in!
What You'll Need...
1 ½ cups all-purpose flour
2 tbsp brown sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
1 cup pumpkin purée
1 cup buttermilk
2 large eggs
2 tbsp melted butter
½ cup chocolate chips
For the Streusel Topping:
½ cup Safe + Fair Pumpkin Pie Granola
½ cup Safe + Fair Chocolate Chip Cookie Dough Granola
2 tbsp brown sugar
2 tbsp melted butter
What You'll Do...
Prepare the Streusel:
In a small bowl, mix the Pumpkin Pie Granola, Chocolate Chip Cookie Dough Granola, brown sugar, and melted butter until the mixture is crumbly. Set aside.
Mix Dry Ingredients:
In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
Combine Wet Ingredients:
In another bowl, whisk the pumpkin purée, buttermilk, eggs, and melted butter until smooth.
Combine Wet and Dry:
Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to over mix. Fold in the chocolate chips gently.
Cook the Pancakes:
Heat a lightly greased griddle or non-stick pan over medium heat. Pour ¼ cup batter onto the griddle for each pancake. While the pancakes cook, sprinkle a generous spoonful of streusel topping onto each pancake before flipping.
Flip and Finish:
Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip carefully and cook for another 2 minutes, or until golden brown and cooked through.
Serve and Enjoy:
Stack the pancakes, drizzle with maple syrup if desired, and sprinkle extra granola on top for added crunch.
