What You’ll Need…
  • 20 ounces dairy-free dark chocolate or chocolate chips
  • 1 teaspoon peppermint extract
  • 4 packages of Remy’s Grahams 
  • (optional) 1/2 dark green candy melts for drizzling
 What You’ll Do…
  1. Place dairy-free chocolate of choice in the top of a double boiler over just barely simmering water. Stir frequently, scraping down the sides with a rubber spatula, until chocolate is melted, 15 to 20 minutes. 
  2. While the chocolate is melting, line two baking sheets with parchment paper and set in the freezer to chill.
  3. Remove melted chocolate from the stove and stir in peppermint extract (if using fresh mint, infuse in the chocolate by placing 2-3 sprigs in the chocolate as it melts. Remove stems prior to step 4.
  4. Dip each Remy’s Graham’s crackers into melted chocolate and then place on the cold, prepared baking sheets. Set the baking sheets in the refrigerator until chocolate sets, about 5 minutes.
  5. Store cookies in an airtight tupperware container (if you can resist eating them all at once!).
