What You’ll Need…- 20 ounces dairy-free dark chocolate or chocolate chips
- 1 teaspoon peppermint extract
- 4 packages of Remy’s GrahamsÂ
- (optional) 1/2 dark green candy melts for drizzling
- Place dairy-free chocolate of choice in the top of a double boiler over just barely simmering water. Stir frequently, scraping down the sides with a rubber spatula, until chocolate is melted, 15 to 20 minutes.Â
- While the chocolate is melting, line two baking sheets with parchment paper and set in the freezer to chill.
- Remove melted chocolate from the stove and stir in peppermint extract (if using fresh mint, infuse in the chocolate by placing 2-3 sprigs in the chocolate as it melts. Remove stems prior to step 4.
- Dip each Remy’s Graham’s crackers into melted chocolate and then place on the cold, prepared baking sheets. Set the baking sheets in the refrigerator until chocolate sets, about 5 minutes.
- Store cookies in an airtight tupperware container (if you can resist eating them all at once!).
