Key Lime Pie-sicles

These crave-worthy Key Lime Pie-sicles are creamy, decadent, and slightly tangy, perfectly replicating the taste of the quintessential springtime treat. Finished with a granola + graham cracker “crust” thanks to Key Lime Pie Granola and crushed Remy’s Grahams, you’ve got the perfectly portable sweet treat the whole family will love. Simple, scrumptious, & fun to make with your little ones? Now that’s what we call a grade A goodie!

What You’ll Need…

  • 1 banana sliced and frozen
  • ½ cup plain Greek yogurt or dairy-free alternative
  • ¼ cup key or regular lime juice 
  • 1 Tbsp honey or sweetener of choice
  • ½ tsp finely grated lime zest
  • ¼ tsp vanilla extract 
  • 3/4 cup Key Lime Pie Granola
  • ¾ Remy’s Grahams, crushed

What You’ll Do…

  1. Soak popsicle sticks in cold water for 10 minutes.
  2. Mix the Key Lime Pie Granola & crushed Remy’s Grahams with 1 1/2 tablespoon date syrup. Add 1 more tablespoon date syrup if the mixture doesn't stick together when pinched together with your fingers.
  3. Press the sticky granola graham mix into the bottom of 5-6 popsicle molds.
  4. Next, blend all wet ingredients until smooth, adding ice as needed to reach a consistency to your liking. If you want a slightly green smoothie, add a few leaves of fresh spinach.
  5. Pour mixture over the granola mix in the popsicle molds.
  6. Place the popsicles in the freezer for 4 hours or longer.
  7. Once frozen, pull the popsicles from the molds by running warm water over the sides of the  molds.
  8. Serve and enjoy!
