Plant-Based + Dairy Free Peppermint Protein Ice Cream

Baby, it’s cold outside, but that’s not stopping us from indulging in our favorite classic christmas treat, peppermint ice cream! The best part? We’ve given this seasonal sweet treat a Safe + Fair twist thanks to our plant-based, dairy-free Vanilla Ice Cream Kids Protein Powder!

Pairing wholesome, real-food ingredients and finished with a festive flair from another seasonal staple, Chocolate Candy Cane Granola, this protein-packed Peppermint Ice Cream is certain to earn you a spot on the nice list!

What You’ll Need…

Ice Cream Ingredients:

1 can coconut cream (not coconut milk)

1 scoop Vanilla Ice Cream Kids Protein Powder

6 Tbsp sugar

½ tsp vanilla extract

¼ tsp peppermint extract

½ cup mini dairy-free chocolate chips

½ cup crushed candy canes

Toppings:

Chocolate Candy Cane Granola, crushed candy canes, miniature dairy-free chocolate chips, & dairy-free whipped cream

What You’ll Do…

  1. Combine ¼ of coconut cream in a blender or food processor.  Blend until smooth.

  2. Add Vanilla Ice Cream Kids Protein Powder, sugar, vanilla extract, remaining coconut cream, & peppermint extract and blend again until smooth.  Mix in crushed candy canes & chocolate chips.

  3. Scrape into a freezer safe container. Cover with plastic wrap, and freeze for 4 hours (or overnight).

  4. Remove frozen ice cream from freezer & let sit at room temperature for a few minutes to soften. 

Top with a hefty handful of Chocolate Candy Cane Granola, crushed candy canes, & mini chocolate chips. Finish with a dollop of dairy-free whipped cream, serve, & enjoy!
