Instructions

  1. Blend the popcorn. Add the entire bag of Safe + Fair Dark Chocolaty Drizzled Popcorn to a high-speed blender or food processor. Blend until you have a fine, flour-like crumb — about 30–45 seconds. You should end up with roughly 1 1/4 cups of popcorn flour. Set aside.
  2. Prep your flax eggs (if vegan). Stir together 2 tablespoons ground flaxseed and 6 tablespoons water in a small bowl. Let sit for 5 minutes until gel-like.
  3. Cream butter and sugars. In a large mixing bowl, beat softened vegan butter with the brown sugar and cane sugar until light and fluffy, about 2 minutes.
  4. Add wet ingredients. Mix in your flax eggs (or real eggs) and vanilla extract until fully combined.
  5. Combine the dry ingredients. In a separate bowl, whisk together the blended popcorn crumb, gluten-free all-purpose flour, baking soda, and sea salt.
