- 6 cups cubed day-old bread (preferably a mix of white and whole wheat)
- 2 cups Safe + Fair Pumpkin Pie Granola
- 1 cup diced celery
- 1 cup diced onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp dried sage
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup unsalted butter
- 2 to 2 1/2 cups vegetable or chicken broth
- 2 large eggs, beaten
What You’ll Do…
- Prepare the bread and granola: Preheat the oven to 350°F (175°C). Spread bread cubes on a baking sheet and toast for about 10-15 minutes until lightly crisp. In a large mixing bowl, combine toasted bread cubes with Safe + Fair Pumpkin Pie Granola.
- Sauté the vegetables: In a large skillet, melt butter over medium heat. Add diced celery, onion, and garlic. Cook for 6–8 minutes until vegetables are tender and fragrant.
- Mix the stuffing: Pour the cooked vegetables into the bowl with the bread cubes and granola. Stir in chopped parsley, dried sage, thyme, salt, and pepper.
- Add broth and eggs: Slowly add broth to the mixture, starting with 2 cups, stirring gently. The stuffing should be moist but not soggy; add more broth if needed. Fold in beaten eggs until fully incorporated.
- Bake the stuffing: Transfer the stuffing mixture into a greased baking dish, cover with foil, and bake for 30 minutes. Remove foil and bake an additional 15 minutes or until the top is golden and crisp.
