Most ice cream cakes have one thing in common: a sad, crumbly cookie crust that either tastes like nothing or is loaded with seed oils, artificial flavors, and a list of ingredients you need a chemistry degree to decode.
Our Seed Oil-Free Chocolate Chip Cookie Dough Granola fixes all of that. Made without seed oils and free from the top 9 allergens, it has the kind of clean, toasty, chocolate-studded flavor that belongs at the base of something spectacular. Pressed into a pan with a little coconut oil, it becomes a crust with crunch, depth, and cookie dough vibes in every single bite.
The rest of the cake is just as simple: full-fat coconut cream, a touch of maple syrup, vanilla, and your favorite mix-ins. We layered in a swirl of dairy-free chocolate for good measure and because, why not?

Homemade Seed Oil-Free Vegan Ice Cream Cake
Serves: 8–10
Prep Time: 20 minutes
Freeze Time: 4–6 hours (or overnight)
Dietary: Vegan, Gluten-Free, Top 9 Allergen-Free, Seed-Oil Free
What You'll Need:
For the Granola Crust:
- 2 cups Safe + Fair Seed-Oil Free Chocolate Chip Cookie Dough Granola
- 3 tablespoons coconut oil, melted
- 1 tablespoon maple syrup
- Pinch of sea salt
For the Ice Cream Layer:
- 2 cans (13.5 oz each) full-fat coconut cream, refrigerated overnight
- 3 tablespoons maple syrup
- 1 teaspoon pure vanilla extract
For the Chocolate Swirl:
- ½ cup dairy-free chocolate chips
- 1 tablespoon coconut oil
To Finish:
- ½ cup Safe + Fair Seed-Oil Free Chocolate Chip Cookie Dough Granola , for topping
- Flaky sea salt, optional
What You’ll Do:
1. Make the crust.
Line an 8-inch springform pan (or square baking dish) with parchment paper. Add the granola, melted coconut oil, maple syrup, and sea salt to a food processor and pulse 4–5 times until the mixture just starts to clump together. You want some texture, not a paste. Press evenly into the bottom of the pan. Freeze for 15 minutes.
2. Whip the coconut cream.
Open the refrigerated cans of coconut cream and scoop out the thick cream into a large bowl, leaving the liquid behind. Using a hand mixer or stand mixer, whip on medium-high for 2–3 minutes until fluffy. Add maple syrup and vanilla and whip again until incorporated. Taste and adjust sweetness.
3. Make the chocolate swirl.
Melt dairy-free chocolate chips and coconut oil together in a small saucepan over low heat, stirring until smooth. Set aside to cool slightly.
4. Layer it up.
Pour the whipped coconut cream over the frozen crust and smooth the top. Drizzle the chocolate in ribbons across the surface, then use a toothpick or skewer to swirl it through the cream.
5. Top and freeze.
Scatter the remaining granola generously over the top. Add a pinch of flaky sea salt if you like a little contrast. Cover and freeze for at least 4–6 hours, or overnight for best results.
6. Slice and celebrate.
Let the cake sit at room temperature for 5–8 minutes before slicing. Run a warm knife through it for clean cuts. Serve immediately and watch it disappear.
What Makes This Cake Different
A lot of "clean" frozen desserts are clean in theory but compromise somewhere: the crust has canola oil, the toppings are sweetened with corn syrup, or the whole thing is made in a facility that isn't allergen-safe. We built this recipe so that every single layer plays by the same rules.
The granola does the heavy lifting. Safe + Fair's Chocolate Chip Cookie Dough Granola is made with whole ancient grains, real chocolate chips, and zero seed oils. It's certified gluten-free, vegan, non-GMO, and free from the top 9 allergens. That means this cake is safe for the whole table, including the guests with the dietary restrictions, the ones with food allergies, and the ones who are just trying to be more intentional about what they eat.
Full-fat coconut cream is your best friend. It whips up to a silky, scoopable texture that mimics dairy ice cream surprisingly well. The key is keeping those cans refrigerated overnight so the cream separates and firms up.
No churn, no fuss. This cake comes together in about 20 minutes of active time. The freezer does the rest.
Tips for the Best Results
- Don't over-process the crust. A few pulses is all it takes. You want granola clusters in there, not dust.
- Chill your bowl before whipping. Pop your mixing bowl in the freezer for 10 minutes before whipping the coconut cream. It helps the cream stay cold and whip up fluffier.
- Let it sit before you slice. Straight from the freezer, the cake will be too firm. Give it 5–8 minutes on the counter and it'll slice beautifully.
- Make it ahead. This cake is actually better on day two. Make it the night before your gathering and let it set fully overnight.
Make It Your Own
- Strawberry swirl: Combine both crowd favorites, Safe + Fair Seed Oil-Free Strawberry Shortcake Granola + Seed Oil-Free Chocolate Chip Cookie Dough Granola. Then, blend frozen strawberries with a splash of maple syrup and swirl alongside the chocolate.
- Mocha layer: Add 1 tablespoon of instant espresso powder to the coconut cream before whipping.
- Extra crunch: Press a second layer of granola between the cream and the chocolate swirl for a hidden crunch layer in every slice.
- Mini versions: Use a muffin tin lined with cupcake liners to make individual ice cream cakes. Perfect for parties, lunchboxes, or just not having to share.
