There are mornings that call for granola straight from the bag, by handful, and there are mornings that call for this. Strawberry Banana Breakfast Boats land firmly in the second category. The best part? They're barely more work than the hand-to-face granola situation.
A banana gets halved, kissed with honey, and slid under the broiler until it's warm, golden, and just barely caramelized. Then it becomes your vessel: filled with creamy Greek yogurt, a spoonful of strawberry jam, fresh sliced strawberries, and a generous handful of Safe + Fair Strawberry Shortcake Granola for that signature crunch. Optional banana chips on top for extra texture, maximum drama.
It's breakfast. It's dessert. It's genuinely something to look forward to.Â
Best of all, it's gluten-free, vegan, non-GMO, and free from the top allergens: no nuts, no eggs, no shellfish, no fish. Clean label all the way.
Mouth watering? Let’s get slicing and dicing!
What You'll Need:
Serves 2
- 2 ripe bananas, halved lengthwise
- 1 tbsp honey
- ½ cup plain Greek yogurt
- 2 tbsp strawberry jam
- ½ cup fresh strawberries, sliced
- ½ cup Safe + Fair Strawberry Shortcake Granola
- Banana chips, for topping (optional)
What You'll Do:
1. Broil the bananas. Set your oven to broil and line a small baking sheet with foil. Place the banana halves cut-side up and drizzle each one with honey. Broil for 4–6 minutes, until the edges are golden and the honey is bubbling. Keep an eye on them — they go from perfect to very done fast.
2. Transfer to a plate. Let the banana halves cool for just a minute or two — they'll be hot. Arrange them on a plate or board, cut-side up, so they cradle your toppings.
3. Layer your toppings. Spoon Greek yogurt down the center of each banana half. Add a dollop (or two) of strawberry jam and swirl it lightly into the yogurt. Arrange the sliced strawberries on top.
4. Add the granola. Finish each boat with a generous handful of Safe + Fair Strawberry Shortcake Granola. This is the moment — that crunch against the warm, soft banana is everything.
5. Top with banana chips (optional, highly encouraged). A few banana chips on top add a fun little crunch and lean into the whole banana boat vibe. No notes.
Serve immediately and eat it while the banana is still warm.
Tips + Swaps
- Banana ripeness matters. Yellow bananas with a few spots are ideal — sweet enough to caramelize beautifully without turning to mush under the broiler. Very green bananas won't deliver the same result.
- Make it a meal. Add a scoop of vanilla or plain protein powder to your Greek yogurt before layering for a more filling breakfast.
- No jam on hand? A drizzle of extra honey or a spoonful of chia seed jam works just as well.
- Going dairy-free? Swap the Greek yogurt for your favorite coconut or almond-based yogurt — the Safe + Fair granola is already vegan, so you're good to go.
- Meal prep note. The granola is best added right before serving so it stays crunchy. You can broil the bananas and prep the toppings ahead, then assemble when you're ready to eat.
